Diseño de un Sistema de Biodigestores para la Empresa de Productos Lácteos Holguín

Abstract

La generación de aguas residuales en las industrias alimentarias es una de las mayores fuentes de contaminación al medio ambiente, debido a las altas cargas contaminantes que transportan. Específicamente la industria láctea se caracteriza por poseer una gran cantidad de materia orgánica, especialmente grasas y aceites, además de sólidos suspendidos y valores de pH elevados inaceptables para su vertimiento. La Empresa de Productos Lácteos de Holguín es un constante foco de contaminación, pues no cuenta con un sistema de tratamiento que permita procesar los residuos generados de los procesos productivos, y la disminución de las cargas contaminantes hacia los cuerpos receptores. Por ello a partir de la caracterización de los residuos, se lleva a cabo la propuesta de un sistema compuesto por tratamientos primarios y biológicos a través de la digestión anaerobia. Como resultado y elemento principal, se realiza el diseño para la construcción de cuatro biodigestores de cúpula fija y de flujo continuo que fueran capaces de evacuar los residuos emanados diariamente y tratarlos. El cumplimiento de los objetivos y los resultados obtenidos en la investigación, fueron posibles debido al empleo de diferentes métodos de investigación científicas de carácter empírico, teórico y estadísticos – matemáticos.

The generation of wastewater in the food industries is one of the major sources of pollution to the environment, due to the high polluting loads they carry. Specifically the dairy industry characterized by having a large amount of organic matter, especially fats and oils, as well as suspended solids and high pH values unacceptable for their dumping. Dairy Products Company of Holguín is a constant source of contamination, since it does not have a treatment system that allows processing the waste generated from the production processes, and the reduction of contaminating loads towards the receiving bodies. Therefore, from the characterization of the residues, the proposal of a system composed of primary and biological treatments through anaerobic digestion was carried out. As a result and main element, the design was made for the construction of four continuous flow fixed dome reactor that were able to evacuate the residues emitted daily and treat them.The fulfillment of the objectives and the results obtained in the research were possible due to the use of different scientific methods of empirical, theoretical and statistical - mathematical research.
