Aplicación de un procedimiento para determinar la necesidad de personal en el restaurante japonés “Kyoto” del Hotel Playa Costa Verde

Abstract

El presente trabajo se desarrolló en el hotel Playa Costa Verde perteneciente a la Cadena de Turismo GAVIOTA S.A. de la provincia Holguín, específicamente en el área de Alimentos y Bebidas (A+B). Muestra los resultados de una investigación que abordó como problema profesional la necesidad de realizar un estudio que permita determinar la cantidad de dependientes requeridos en el restaurante japonés “Kyoto” de la entidad objeto de estudio, con el objetivo general de aplicar un procedimiento que de solución a dicho problema. Se aplicaron técnicas tradicionales como la observación directa, el cronometraje y la fotografía. Los datos obtenidos fueron procesados y validados a través del Software MedTrab. Los resultados muestran que el mice in place se puede llevar a cabo con dos trabajadores, para el servicio se necesitan cuatro dependientes y el capitán de salón puede apoyar el trabajo de los dependientes sin afectar el desempeño de sus actividades funcionales.

The present work was developed in the hotel Beach Green Costa belonging to the Chain of Tourism GULL CORP. of the county Holguín, specifically in the area of Foods and Drinks (A+B). It shows the results of an investigation that it approached as professional problem the necessity to carry out a study that allows to determine the quantity of clerks required in the Japanese restaurant "Kyoto" of the entity study object, with the general objective of applying a procedure that of solution to this problem. They were applied technical traditional as the direct observation, the timing and the picture. The obtained data were processed and validated through the Software MedTrab. The results show that the mice in place you can carry out with two workers, for the service four clerks are needed and the living room captain can support the work of the clerks without affecting the acting of their functional activities.
