Rediseño de una máquina troceadora de Carica papaya (fruta bomba)

Abstract

El presente trabajo de diploma fue realizado en la Empresa de Conservas de Vegetales Turquino localizada en la provincia de Holguín, perteneciente al Ministerio de la Industria Alimenticia (MINAL). La problemática abordada se centró en el rediseño de una máquina troceadora de fruta bomba. Esta empresa tiene como objeto social fundamental la elaboración y comercialización mayorista de conservas de frutas, compotas, conservas de vegetales, conservas de tomate, semielaborados de frutas, vegetales y salsas. En la línea de producción manufacturada de trocitos de fruta bomba se estaba presentando un elevado índice de rechazo, por no existir homogeneidad en el tamaño de los trocitos cortados, lo que provocaba que la cocción de estos dependiera del tamaño, afectando de este modo no solo la producción si no también la estética del producto final. Para la realización del rediseño de la máquina se tuvo presente el principio de funcionamiento de una en desuso en la propia Empresa, que respondiera a la necesidad de la unidad. Una vez concluida la etapa de rediseño se propone la construcción de la misma para el logro de la disminución del índice de rechazo así como elevar la productividad del trozado de fruta bomba en la línea de producción.

The present work of diploma was accomplished in the Enterprise of Preserves of Vegetables Turquino located in the province of Holguin, belonging to the Ministry of The Nutritious Industry. The approached problem was centered in the redesign of a machine haulm slasher of fruit bomb. This enterprise has like social fundamental object the elaboration and commercialization wholesaler of preserves of fruits, preserves, preserves of vegetables, tomato preserves, semimanufactured of fruits, vegetables and preserves, preserves of vegetables, tomato preserves, semimanufactured of fruits, vegetables and sauces.In the line of manufactured production of little pieces of fruit bomb appeared a high index of rejection, for not existing homogeneity in the size of the cut pieces, what provoked that the cooking of these depend on the size, affecting in this way not only production if not also the esthetics of the final product. For the realization of the redesign of the machine one had present the operation principle of one in disuse in the own enterprise, that responded to the necessity of the unit. Once concluded the redesign phase intends the construction of the same for the achievement of the decrease of the index of rejection as well as to elevate the productivity of the cut in piece of fruit bomb in the production line.
