Determinación de las necesidades de personal en el restaurante”Romántico” en el Hotel Playa Pesquero

Abstract

El siguiente trabajo se desarrolló en el área de servicio del restaurante”Romántico” del hotel Playa Pesquero, ubicado en la región norte de la provincia de Holguín, perteneciente al grupo de Turismo Gaviota. Uno de los mayores retos que enfrenta cualquier empresa en estos momentos cuando esta se encuentra buscando ser cada vez más competitiva, es tener una gestión eficaz de los recursos humanos. La planeación, ocupa un papel preponderante dentro de la gestión de estos pues la misma no solo es la encargada de asegurar que cada una de las actividades se realice en tiempo, sino también de acuerdo con las necesidades de la organización. El objetivo de esta investigación es determinar las necesidades de personal en el área de servicio del restaurante para poder brindar un servicio de excelencia, el cual constituye un eslabón fundamental en la prestación de un servicio competitivo, eficiente, eficaz y capaz de satisfacer las necesidades y expectativas de los clientes. Para dar cumplimiento a este objetivo se utilizaron técnicas tradicionales como la observación directa, el cronometraje y la fotografía, además de otras más avanzadas como son la teoría de cola y el análisis de documentos para la recopilación de información. Que exista menos personal puede traer consigo demoras en el servicio, exceso de trabajo, e insatisfacción de los clientes, por otro lado más personal puede implicar gastos innecesarios, poca utilización de la capacidad de trabajo de los obreros, por lo que el principal aporte radica en determinar la cantidad de personal óptima que se necesita en el área objeto de estudio. Como resultado final se logró determinar la cantidad de personal necesaria para desarrollar cada una de las actividades que se llevan acabo durante el servicio.

The present work was developed in the area of service of the restaurant "Romantic" of the hotel Playa Pesquero, located in the north region of the county of Holguín, belonging to the Gaviota Tourism group. One of the old challenges that face any company in these moments when this is aiming to be more and more competitive, is to have an effective administration of the human resources. The planeation, it occupy a preponderant paper inside the administration of these, because the same doesn't sole is the entrusted of assuring that each one of the activities is carried out in time, but also in accordance with the necessities of the organization. The objective of this investigation is determine the necessities of personnel in the area of service of the restaurant in order to could offer a service of excellence, which constitutes a fundamental link in the benefit of a competitive service, efficient, effective and able to satisfy the necessities and expectations of the clients. In order to give execution to this objective they were used traditional techniques like the direct observation, the timing photographs, besides another more advanced how they are the theory of line and the analysis of documents for the summary of information. That less personnel exists could bring gets delays in the service, excess of work, [and insatisfaction of the clients, on the other hand more personnel could imply unnecessary expenses, little use of the capacity of the workers´work, for what the main contribution resides in determining the amount of good personnel that is needed in the area study object. As final result was possible to determine the amount of necessary personnel in order to develop each one of the activities that they are taken end up during the service.
