Determinación de la necesidad de personal en el salón del Restaurante Especializado “ Romántico ” del Hotel Playa Pesquero

Abstract

El presente trabajo se desarrolló en el Hotel Playa Pesquero, perteneciente a la cadena de turismo GAVIOTA .SA de la provincia Holguín, este se realizó específicamente en el restaurante especializado “Romántico”. El trabajo consiste en la aplicación del procedimiento propuesto por De Miguel 2006 con el objetivo de determinar la cantidad de personal que se requiere en el salón del restaurante “Romántico”, insignia del hotel y punto de referencia del mismo. El estudio tributa a la toma de decisiones en la planeación de los recursos humanos en la entidad. Durante la realización del mismo se aplicaron técnicas para al análisis de la jornada laboral como son la fotografía y el cronometraje así como la observación directa. También se aplicaron otras técnicas como la teoría de colas y el uso de los software Medtrab y Wqsb durante el transcurso de la investigación. Se exponen los resultados del trabajo evidenciando la necesidad de personal para lograr prestar un servicio de excelencia como el que se requiere en estos tipos de restaurantes, y se plantean soluciones factibles.

The present work was developed in Playa Pesquero Hotel, belonging to the tourism chain GAVIOTA .SA of the county of Holguín, it was carried out specifically in “Romántico” specialized restaurant. The work consists in the application of the procedure proposed by De Miguel 2006 with the objective to determining the quantity of personnel required in the salon of the “Romántico" restaurant, badge of hotel and reference point. The study pays to the taking decisions in the human resources plantation in the entity. During the realization of same one they were applied technical that pay to the analysis of the Labor Day as they are the picture and the timing as well as the direct observation. Other techniques were also applied as the lines theory and the use of the software Medtrab and Wqsb during the course of investigation. The results of the work are exposed evidencing personnel's necessity to be able to lend an excellence service like is required in these types of restaurants, and they think about feasible solutions.
