Propuesta de precios de los productos gastronómicos elaborados en la UEB “La Holguinera”,en Mayarí
Abstract
La presente investigación fue realizada en la UEB de gastronomía “La Holguinera” del
municipio de Mayarí, con el objetivo es diseñar un sistema para establecer los
precios de los platos y productos ofertados que cumpla con los
requerimientos de la legislación vigente en la materia, partiendo de la facultad dada de
elaborar sus propios precios.
Consta de dos capítulos: en el primero se abordan los elementos teóricos del objeto
de estudio de la investigación, resultado de la búsqueda bibliográfica y un segundo
capítulo donde se presenta la propuesta de un sistema de precios y su
procedimiento de cálculo, introduciendo una herramienta informática para calcular
los mismos. En todos los casos se ha respetado la Resolución 21/1999 y sus
Instrucciones 16/2000 y 36/2001, todas del Ministerio de Finanzas y Precios. Los
resultados obtenidos del proceso investigativo fueron: se elaboraron las fichas de
precios de determinados productos, empleando la metodología del Ministerio de
Finanzas y Precios The present investigation was carried out in the UEB of gastronomy "La

a system to establish the prices of the dishes and products offered that
meets the requirements of the current legislation on the matter, starting
of the faculty given to elaborate their own prices.
It consists of two chapters: the first addresses the theoretical elements
of the object of study of the research, the result of the bibliographic
search and a second chapter where the proposal for a price system and
its calculation procedure is presented, introducing a computer tool to
calculate them. In all cases, Resolution 21/1999 and its Instructions
16/2000 and 36/2001, all from the Ministry of Finance and Prices, have
been respected. The results obtained from the investigative process
were: the elaboration of the price sheets of certain products, using the
methodology of the Ministry of Finance and Prices
