Estudio de oportunidad del proyecto de inversión para el procesamiento y comercialización de la cáscara de café en la UEB Beneficio de Café de la Empresa Agroforestal Mayarí
Abstract
La presente investigación se realiza en la Empresa Agroforestal Mayarí, donde se
efectúa el estudio de oportunidad del proyecto de inversión para el procesamiento y
comercialización de la cáscara de café Arábico, se pretende aprovechar la post
cosecha del cultivo utilizando la cáscara como materia prima en la industria
alimentaria lo que contribuye a mejorar la calidad de vida de las personas, por su alto
contenido de proteínas, minerales, antioxidantes y demás propiedades benéficas para
la salud. Actualmente, en el proceso de beneficio e industrialización del grano de café
solo se aprovecha el 5% del peso del fruto fresco y el 95% restante está siendo
desperdiciado pues no generan ninguna fuente de ingresos para las Despulpadoras.
El objetivo de la investigación es analizar la oportunidad técnico-económica del
proyecto en cuestión, está estructurado en dos capítulos, en el primero se
caracterizaron los fundamentos teóricos – práctico del proceso inversionista y de los
estudios de oportunidad de inversiones en activos de capital; mientras, que en el
segundo se desarrolló el procedimiento respaldado por el Decreto 327/14 del
Ministerio de Economía y Planificación. Se puede evidenciar como resultado del
proyecto que el subproducto del café ofrece diversas posibilidades de utilización
convirtiéndose en fuente de ingresos para el crecimiento de las utilidades en la
economía de la empresa a través de la venta de estos novedosos productos, además
mitiga la problemática medioambiental ya que se reduce el vertimiento de desechos
en la cosecha del grano. The present investigation is carried out in the Mayarí Agroforestry Company, where the opportunity study of the investment project for the processing and commercialization of the Arabica coffee husk is carried out, it is intended to take advantage of the post-harvest of the crop using the husk as raw material in the food industry, which contributes to improving the quality of life of people, due to its high content of proteins, minerals, antioxidants and other beneficial properties for health. Currently, in the process of benefiting and industrializing the coffee bean, only 5% of the weight of the fresh fruit is used and the remaining 95% is being wasted because they do not generate any source of income for the Pulpers. The objective of the research is to analyze the technical-economic opportunity of the project in question, it is structured in two chapters, in the first the theoretical-practical foundations of the investment process and the opportunity studies of investments in capital assets were characterized; while, in the second, the procedure supported by decree 327 MEP was developed. It can be seen as a result of the project that the coffee by-product offers various possibilities of use, becoming a source of income for the growth of profits in the company's economy through the sale of this new product, in addition to mitigating environmental problems since which reduces the dumping of waste in the grain harvest is reduced
