Determinación de las necesidades de personal en la Planta de Producción de la UEB Fábrica de Sorbetos Banes

Abstract

La presente investigación fue desarrollada en la Unidad Empresarial de Base (UEB) Sorbetos Banes, con el objetivo de determinar el personal óptimo en la planta de producción. Para el cumplimiento de este objetivo fue necesario adaptar y aplicar el procedimiento ajustado de la propuesta hecha por De Miguel Guzmán (2006), modificado por Claro Ramírez (2014). Para la confección de la tesis, se realizó revisiones bibliográficas y se emplearon métodos teóricos como el análisis y síntesis, histórico-lógico y métodos empíricos (observación directa, entrevistas informales, revisión documental). Además se emplearon técnicas de estudio de tiempos como la auto-fotografía y el Muestreo de Observaciones Instantánea y se empleó el software profesional MedTrab para el procesamiento de estas técnicas. Con la realización de la investigación se concluyó que existe excedencia de personal en las líneas de producción de sorbetos y galletas dulce, provocando sub utilización de la carga de trabajo y déficit de personal en la brigada de higienización. Se determinó el personal necesario por cada una de las brigadas estudiadas de acuerdo a la carga de trabajo de cada trabajador.

The investigation was developed in the Empresarial Base Entity (EBE) wafers factory of Banes, with the objective of determining the optimal staff in the plant of production. It was necessary to adapt for the fulfillment of this objective and to apply the procedure adjusted to the proposal done by De Miguel Guzman (2006), modified by Claro Ramirez (2014). For the making of the thesis, was carried out bibliographical revisions and theoretical methods were used as the analysis and synthesis, historical-logical and empiric methods (direct observation, interview informal, documental revision).Techniques such as the study of time through self-photographs and sampling instantaneous observations were also used as well as the MedTrab professional software which was useful for processing these techniques. The realization of the investigation concludes that it exist excess of personnel in the lines of production of wafers and sweet cookies, by causing sub-utilization of the workload and deficit of personnel in the section of higienization. Decided the necessary personnel for each of the affected sections according to the workload of each worker
