Gestión integrada y proactiva de las restricciones físicas en el proceso alojamiento del Hotel Pernik

Abstract

La gestión de restricciones físicas, constituye una herramienta necesaria para el desarrollo de la gestión logística, bajo las condiciones actuales en Cuba y el mundo. Independientemente a lo logrado en materia de logística y cadenas de suministro, constituye una condición insoslayable el desarrollo de herramientas que permitan el empleo eficiente de recursos y faciliten su gestión integrada, para lograr mayores niveles de servicio al cliente. La presente investigación fue realizada en el Hotel Pernik perteneciente a la Cadena de Turismo ISLAZUL de la provincia de Holguín. Después de haber detectado un conjunto de deficiencias en el flujo logístico se plantea como objetivo de estudio gestionar de forma integrada y proactiva las restricciones físicas en el proceso Alojamiento en dicho hotel contribuyendo a mejorar sus niveles de eficacia y eficiencia a partir de la aplicación parcial del procedimiento propuesto por (Pérez Pravia 2010). Para dar cumplimiento al objetivo propuesto se elaboró el marco teórico-práctico-referencial de la investigación donde aparecen recogidos los elementos fundamentales que permiten adentrarse en el estudio del tema. Además se utilizaron métodos teóricos y empíricos, incluyendo técnicas y herramientas de la Ingeniería Industrial y otras especialidades afines. Se obtuvo como la restricción subordinadora actual en el Hotel el recurso camareras. Para eliminar esta restricción se propusieron tres alternativas que no implican inversiones o gastos no planificados.

The management of physical constraints is a necessary developmental tool for the development of logistics management, under the current conditions in Cuba and the world. Regardless of what has been achieved in terms of logistics and supply chains, the development of tools that allow the efficient use of resources and facilitate their integrated management, to achieve higher levels of customer service, is an unavoidable condition. The present investigation was carried out in the Hotel Pernik belonging to the ISLAZUL Tourism Chain of Holguin province. After having detected a set of deficiencies in the logistic flow, the objective of the study is to manage in a integrated and proactive way the physical constraints in the process. Lodging in said hotel contributing to improve its efficiency and effectiveness levels from the partial application of the procedure proposed by (Pérez Pravia 2010). In order to fulfill the proposed objective, the theoretical-practical-referential framework of the research was elaborate, where the fundamental elements that allow to enter the study of the subject are collected. In addition, theoretical and empirical methods were used, including techniques and tools of Industrial Engineering and other related specialties. The current subordinate restriction in the Hotel was the resource of waitresses. To eliminate this restriction, three alternatives were proposed that do not involve investments or unplanned expenses.
