Diseño del sistema de inventario de suministros en el Hotel Playa Costa Verde de la cadena Gaviota

Abstract

RESUMEN Actualmente la gestión de inventarios ha alcanzado un significado especial en las organizaciones productoras y de servicios. Este tiene gran importancia, pues garantiza que no ocurran interrupciones en el proceso, logrando así la satisfacción de las demandas de los clientes, permitiendo que se preste un servicio con calidad y rapidez. El objetivo fundamental de esta investigación es la propuesta de diseño del sistema de gestión de inventarios en el lobby bar del Hotel Playa Costa Verde, esta propuesta contiene procedimientos específicos para el diagnóstico y diseño de las actividades relacionadas con la gestión de inventarios del sistema logístico, que contribuye al mejoramiento continuo del desempeño de dicha entidad. Para cumplir con el objetivo propuesto fueron utilizadas diferentes técnicas y métodos entre estas: la encuesta, entrevistas, consulta a especialistas, y métodos estadísticos matemáticos como la simulación a través de Monte Carlo, entre otros. Además de consultarse una amplia bibliográfica actualizada sobre el tema. Con la presente investigación se logró detectar los aspectos que afectan la gestión de inventario, el procedimiento utilizado permite tener los productos necesarios en el tiempo y lugar requerido, lo cual contribuye al correcto funcionamiento de esta entidad. SUMMARY Currently inventory management has achieved a special significance in the production and service organizations. This is of great importance as it ensures that there are no interruptions in the process, thus satisfying the demands of customers, allowing them to provide quality service and fast. The main objective of this research is the proposed design of the inventory management system in the lobby bar of Hotel Playa Costa Verde, this proposal contains specific procedures for the diagnosis and design activities related to inventory management, and the logistics system contributing to the continuous improvement of the performance of that entity. To meet the proposed target the following techniques and methods were used different techniques and methods among these: the survey, interviews, consultations with specialists, also mathematical and statistical methods such as simulation through Monte Carlo, among others. As well as broad range of literature available to date on this subject. The present investigation identifies areas that affect the management of inventory, the procedure used allows the necessary products in time and place required, which contributes to the proper functioning of this entity
