Perfeccionamiento de la documentación del Sistema de Gestión Ambiental en el proceso de Ama de Llaves del Hotel Brisas Guardalavaca.

Abstract

El presente trabajo de diploma se realizó con el objetivo de contribuir a la mejora de la documentación específica que debe llevar la gestión ambiental del proceso de Ama de Llaves en el Hotel Brisas Guardalavaca, para contribuir a la implementación del Sistema de Gestión Ambiental desarrollado por esta instalación. En el desarrollo de la investigación se tomó como base los trabajos de diploma realizados en los procesos de Elaboración de Alimentos y Servicios Técnicos, las normas NC-ISO 14000, instrumento guía por el cual se realizó el diagnóstico del proceso y se elaboró la mejora de la documentación relativa a la gestión ambiental del proceso de Ama de Llaves, y, toda la documentación del sistema ambiental existente en la entidad. Se utilizaron las normas NC-ISO: 9000, para identificar los subprocesos y procedimientos existentes en Ama de Llaves y, se tomaron como referencias las características del turismo sostenible para los sistemas de gestión ambiental desde un enfoque de proceso dentro de las empresas hoteleras. Como resultados de la investigación se obtuvieron el mapa de proceso que representa al mismo, los diagramas de flujo para los subprocesos de Ama de Llaves, en los que se ubicaron los puntos de control ambiental y la referencia a la documentación relacionada. Esta investigación permitió que el proceso posea actualmente una documentación más directa en cuanto al aspecto ambiental se refiere, que responda a la política, objetivos y metas ambientales establecidas por esta instalación y a su vez, a una mejor implementación del Sistema de Gestión Ambiental.

The present diploma work was carried out with the objective of contributing to the improvement of the specific documentation that should take the environmental administration of Housekeeping process in the Hotel Brisas Guardalavaca, to facilitate the implementation of the Environmental Administration System developed by this installation and to achieve bigger efficiency in the work that workers and directives of this process carry out. In the development of the investigation was taken like base the diploma works carried out in the processes of Foods Elaboration and Technical Services, as well as the family of norms NC-ISO 14000, orchestrate it guides for which was carried out the diagnosis of the process and the improvement was elaborated from the relative documentation to the environmental administration of Housekeeping process, and, the whole documentation related with the existent environmental system in the entity. In the same way was taked the family of quality norms NC-ISO: 9000 for identifing the different subprocesses and procedeurs in Housekeeping process. They also took like references the characteristics of the sustainable tourism for the systems of environmental administration and the particularities and benefits of the process focus in companies borrowers of services. As results of the investigation were obtained the process map that represents to the same one, the diagrams of flow for the processes of 2nd level or subprocesses in Housekeeping process, in those the points of environmental control and the reference were located to the related documentation. This investigation allowed that the process possesses a more direct documentation at the moment as for environmental aspect he/she refers that responds to the politics, objectives and environmental goals settled down by this installation and in turn, to a better implementation of the Environmental Administration System.
