Diseño y construcción de una máquina troceadora de fruta bomba

Abstract

El presente trabajo de diploma fue realizado en la Empresa el Yayal de Holguín, perteneciente al Grupo Empresarial del Ministerio del Azúcar (GEMA). La problemática científica abordada se centró en el diseño y construcción de una máquina troceadora de fruta bomba. La referida unidades encargada de la producción de derivados de frutas, tales como, mango, fruta bomba, guayaba etc. En la línea de producción detrocitos de fruta bomba se estaba presentando un elevado índice de rechazo (cada 1000kg, 311kg de rechazo), por noexistir homogeneidad en el tamaño de los trocitos cortados, lo que provocaba que la cocción de estos dependiera del tamaño, afectando de este modo no solo laproducción si no también la estética del producto final. Para la realización del diseño y construcción de la máquina se tuvieron presentes las premisas y principios del diseño modular, a pesar de realizarse un diseño secuencial inverso, que respondiera a lanecesidad de la unidad. Una vez concluida la etapa de diseño y fabricación de la máquina, se logró una disminución al 100% del índice de rechazo, lográndose con ello un incremento de la producción,optimizándose la fuerza de trabajo, pues antes se empleaban cuatro (4) hombres en el proceso de corte manual, disminuyéndose solo a un hombre con el empleo de la máquina. The present diploma work was carried out in the Company the Yayal of Holguín, belonging to the Managerial Group of the Ministry of the Sugar (GEM). The approached scientific problem you center in the design and construction of a machine troceadora of fruit bomb. The referred unit is taken charge ofthe production of having derived of fruits, such as, mango, fruit bomb, guava etc. In the line of production of pieces of fruit bomb a high index of rejection was presenting (each 1000kg, 311kg of rejection), for not existing homogeneity in the size of the cut pieces, what caused that the cooking of these it depended on the size, affecting this way not alone the production but also the aesthetics of the final product. For the realization of the design and construction of the machine present the premises and principles of the design were had to modulate, in spite of being carried out an inverse sequential design that he/she responded to the necessity of the unit. Once concluded the design stage and production of the machine, a decrease was achieved to 100% of the index of rejection, being achieved with it an increment ofthe production. Being optimized the work force, because before four were used (4) men in the process of court manual, diminishing alone to a man with the employment of the machine.
